The founder : Nathan Zalberg

A story of career change and passion

Passionate about cheeses and determined to help small producers make a living from their craft, Nathan Zalberg has been hosting tasting workshops since March 2023 ! In this role, he welcomes both individuals and businesses. After a career in sales forecasting in Paris, he decided to switch careers to focus on cheese. To truly understand the product, he studied at the National School of Dairy Industry (ENIL) for a full year in the region where cheese is a religion: Franche-Comté. There, he learned the secrets of cheese AOPs and the production of some of them (particularly Comté, Morbier, Bleu de Gex, Mont d’Or…). He also worked alongside local producers to better understand their challenges. He then decided to explore the profession of cheesemonger by working with Fromagerie Xavier in Toulouse for several months.

We strongly believe that a company should first and foremost have a positive economic and social impact. We collaborate closely with local artisans, including small producers and city merchants. Our workshops aim not only to showcase quality products but also to give them visibility to a wider audience.
